Pho, enters the lexicography of America

Pho, for the uninitiated is a beef noodle soup sold all over Vietnam. The American dictionary people, Miriam-Webster, has just added the word to its latest edition, claiming that, “the addition of 150 new words to the dictionary reflects the breakneck pace of development of digital technology and its impact on the lives of human beings”.

Pho Vietnam enters lexicography of America

They describe in the following manner, “originating from Vietnam, it is a dish of beef broth or chicken and noodles made from rice” That it has entered into the common language of America comes as no surprise. During the war many GIs virtually lived off Pho, when American food was in short supply. After the war, many returned home taking young Vietnamese brides with them. The Vietnamese community in America grew and soon it was not uncommon to see Pho shops on the streets of America.

Pho, had humble beginnings in Hanoi, sold by street vendors who would carrying boiling water in large pots on a yoke across their shoulders. They would make the soup up, fresh on the spot and people grew to love it. It’s fame grew and it spread across the country. Travelers should enjoy it in Vietnam tours. Nowadays it is regarded as the Vietnamese National dish and is available everywhere, being eaten by millions everyday, often as a breakfast dish in Vietnam tours.

It is vibrant, fresh tasting and bursting with flavour. The most popular is Pho Bo Thai, in which raw, rare beef is dropped in at the point of serving and allowed to cook in front of your eyes on the table. The noodles are of the rice variety, made by soaking rice and casaba root in water to create a starchy liquid. Then straining the glutinous rice soup to create a thick cream, which is poured on to a hotplate, setting immediately. After drying out the sheet of rice paper, is cut into thin strips called Pho, from where the soup gets its name. The same rice paper is used for making spring rolls.

From humble beginnings on the odd American street corner, it has continued to grow in popularity with the same kind of speed that it did in its native Vietnam. At the time of writing there are Pho restaurants in every one of the fifty States of America. The West coast in particular is crammed with them. Possibly because the warm climate suits Vietnamese people better than some of the colder states, though Alaska now has Pho restaurants. There are estimated to be over 600 Pho restaurants in California alone.
